My 568th Way to Make Zucchini


Zucchini Fritters:

1 large zucchini shredded
1 small onion finely chopped
3 eggs beaten
1/2 cup Parmasean or Romano cheese
3/4 C. Milk
2C. flour
Salt & Pepper to taste
Garlic powder and Onion powder to taste
1/4 C. Vegetable oil

Combine all ingredients well and fry in vegetable oil until golden.
These are good right out of the frying pan, but even better the next day after all the flavors come together! Really good in a pita with lettuce, tomato and Ranch dressing!

we have made these with potatoes too. Add some curry for flavour when making the potato ones.
